The world has a love affair with pizza. So much so that the we even have a National Pizza Day of Celebration in every year.

You could say it was the fast food of the day when the term pizza was first recorded in the 10th century in a Latin manuscript from the Southern Italian town of Gaeta.

Fast forward a thousand years and historians will claim that modern pizza was invented in Naples. Then the Italians wanted to go one step further and will attest that its origins of pizza date back to 1889 honouring the Queen consort of Italy, Margherita of Savoy.

Legend has it the first Margherita pizza was created for her by pizza maker Raffaele Esposito.

In reality, pizza probably developed as a quick and easy meal that could use readily available and affordable ingredients, be cooked quickly and was easy to handle and eat – similar to its other Mediterranean cousins like pide.

But enough of the arguments. One thing we can all agree on…pizza has literally taken over the world. The real question is, how can one simple dish be so polarising?

Quite simply, it’s about which ingredients are used. And the one pizza staple that continues to lead to heated discussions is the cheese. Can a pizza really taste the same if a simple store-bought pizza blend is used? Or worse still if, a simple block of cheddar is grated and lavishly spread over the top! I hear the screams coming from pizza kitchens across the globe!

The universal answer is no. And what all pizza lovers, cooks and aficionados will attest to is that mozzarella is the only cheese to choose. Not just any mozzarella, mind you. The blends are countless and there is a huge difference between authentic mozzarella and the packaged variety we see in our supermarkets. (Do the arguments end!). In the end it all comes down to the texture and suitability of the mozzarella cheese. And in today’s world, there is quite simply perfect pizza cheeses.

Cheese is essential on pizza, but what cheese?
